Smoked Salmon Crostini recipe



8 oz smoked salmon
1/4 cup creme fraiche
lemon juice
red onion
french bread
butter
olive oil
black pepper

Mix creme fraiche with about two tablespoons of lemon juice and let chill in the refridgerator.  Slice the french bread into about 1/4 inch slices.  Fine chop the red onion and mix with some olive oil and lemon juice to taste.  Melt some butter in a pan on low heat and dip one side of the bread slice in the butter.  Toast the bread in an oven at about 350 until the desired crunchiness.  Spread the creme fraiche onto one side of the toast slice.  Lay on a piece of the salmon.  Finally top with the onions and some pepper.
